Daniel is 9 months at this date and started rejecting the spoon a couple of weeks ago and now he wants to feed himself. I’m very happy because that gives me time to do other stuff in the kitchen or around the house while he eats and also that teach him to be independent, yay! But, even thought he has 6 teeth, he still need to get soft food that melts in his mouth. Those baby puffs you buy at the store are good for when you are out and about, but wow the quantity of sugar added is terrible! I needed to find a recipe to make my puffs at home. Surfing the internet I found this one and made some adjustment and Danny loves them. So, here goes the recipe for Sweet Potato Puffs for Babies
- 1 very large sweet potato or 2 medium ones
- one banana
- 1 cup of coconut flour (or whole wheat flour)
- 1/2 cup ground flax seeds
- 3tbs coconut oil
- 3 tbs coconut milk ( or another milk or water)
- 2 tbs puree – (optional but it’s a good choice to give a natural sweetness)
- Cinnamon to taste (optional)
- Preheat your oven to 350. To get the sweetest flavours out of your sweet potato and banana it’s good to bake them.
- The sweet potato should be done in 45 min- 1hr depending on the size and banana could be baked for about 20 min.
- When they are all done, throw everything in a food processor or blender and mix it till it’s nice and smooth.
- You can use a zip lock bag with the corner snipped off or a pastry bag to pipe little “puffs” on a baking sheet.
- Bake for 15 min and store in the fridge. They stay fresh for about a week.
I still have several bags in the freezer and any time he want I pop some in the microwave and heat them for about 10 sec. They melt easily
Note: These puffs will have a slightly mushy/chewy texture once bitten into.
